Bean and courgette pâté

Mouthwatering za’atar-infused bean pâté with zucchini

This pâté is a favourite of mine because it is a little more unusual, easy to make.

Equipment needed for this recipe:

Air fryer.

Bean pâté

Bean pate with roast zucchini and spiced with Za'atar

Equipment

  • 1 Air fryer
  • 1 Power Blender

Ingredients
  

  • 4 zucchini (medium sized)
  • 4 tbsp olive oil
  • ½ lemon juice
  • 2 cloves garlic crushed
  • 2 tbsp tahini
  • 1 tin beans cannellini or butter
  • 2 tsp za'atar More or less as per preference
  • coconut or olive oil spray

Instructions
 

  • Slice the zucchini into 2cm rounds and spray with oil
  • Place the zucchini into the air fryer at 180 deg for about 8 minutes. Check periodically. The zucchini should be slightly toasted.
  • Place the olive oil, zucchini, lemon juice, garlic, tahini, za'atar, and salt into the power blender and blend until smooth.
  • Place into a container and cool
