Comfort in a Bowl: The Benefits of Butternut Soup

Butternut Soup

Equipment

  • 1 Instant Pot
  • 1 Power Blender
  • 1 Jug 1½lt or 2lt measurement
  • 1 Peeler
  • 1 Chopping board
  • 1 Knife chopping
  • 1 Kitchen Scale
  • 1 Teaspoon measuring spoon

Ingredients
  

SOUP INGREDIENTS

  • 500g Butternut peeled and cubed
  • 1 Onion peeled and quartered
  • 1 Carrot peeled and chopped
  • 30 ml Tomato chopped
  • Ltr Marmite broth
  • 5 ml Jeera (Cumin)
  • 10 ml Dhania (Coriander)
  • 10 ml Sugar
  • Salt & Pepper to taste

STOCK INGREDIENTS

  • lt Water
  • 1 Tbsp Stock powder

Instructions
 

  • Place all the ingredients in the Instant Pot. Press the SOUP setting and set teh time on 8mins. Ensure the VENT is closed. Disable the KEEP WARM function.
  • Allow Instant Pot to slow release naturally.
  • Once the Instant Pot has released the pressure, let it cool off completely.
  • Once cooled, place the ingredients into the Blender jug. Press the SHAKE setting and press START.
  • Enjoy!
