Easy Mac 'n Cheez

Very easy Vegan Mac 'n Cheez (Delicious)

Ingredients
  

  • 450 g Dried Pasta

For the Cheez Sauce

  • 2 Cups Potatoes (360g) peeled and chopped
  • 1 Cup Carrots (135g) peeled and chopped
  • 1/3 Cup Olive Oil (85ml) extra virgin
  • 1/2 Cup Plant Milk (125ml) unsweetened
  • 1/2 Cup Nutritional Yeast (8 Tbsp)
  • 1 Tbsp Lemon Juice
  • 1 tsp Salt
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder

Garnish

  • 4 Tomatoes (small) Sliced

Instructions
 

  • Steam the potatoes and carrots for about 20 minutes, or until soft.
  • Turn the oven on - 180 degrees to heat up
  • In the meanwhile, cook the pasta according to the package directions. Drain and set aside in the pot.
  • Place all the vegan cheez ingredients in a blender jug (Including the potatoes and carrots) and blend until smooth.
  • Mix the blended cheez into the cooked pasta.
  • Place the mixed mac n cheez into the oven dish, garnish with the sliced tomato.
  • Place into the oven and bake for 30 minutes.
  • Once done turn the oven off and serve immediately. Enjoy

Notes

Keep leftover cheez in an airtight container in the fridge for 3-5 days.
To reheat it, add a little milk if the sauce is too thick.
OPTIONAL:
You can serve it with Cayenne pepper and/or tomato sauce
