Aquafaba Chocolate Mousse

Ingredients
1¼
c
aquafaba
chilled (± 300ml)
½
tsp
cream of tartar
1⅓
c
bittersweet chocolate
(± 200g)
Instructions
Melt the chocolate in a double boiler over medium heat, stirring occasionally
Once melted, set aside and let it cool to room temperature
Make aquafaba (see notes above the recipe)
Fold the aquafaba into the chocolate mixture and portion into ramekin bowls, or cups
Place into the refrigerator for 4-6 hours, best if left overnight
Garnish as desired, and serve
Notes
The amount of Aquafaba used in this recipe is approximately liquid from 2 cans of no-salt-added chickpeas.
