Delicious Raw Tomato Soup

This Delicious raw Tomato Soup can be enjoyed as a hot or cold soup, as a starter or a full meal and is quick and easy to prepare.

Ingredients

7 ripe tomatoes
1 zucchini
1 yellow or red pepper
10-12 sun-dried tomatoes
¼ purple red onion
2 garlic cloves
2 dates (for a bit of sweetness)
1 teaspoon of your favorite seasoning or sea salt
1 tablespoon lime or lemon juice
2-3 tablespoons olive oil
1 cup water (Chilled for a cold soup and boiling for a hot soup)
½ – 1 small red chili (for spicy taste)
leaves of 6 stalks of parsley

  • Super Blender
  • 7 Ripe tomatoes
  • 1 Zucchini
  • 1 Yellow or red pepper
  • 10 – 12 Sun-dried tomatoes
  • ¼ Purple red onion
  • 2 Garlic cloves
  • 2 Dates ((for a bit of sweetness))
  • 1 tsp. of your favourite seasoning or sea salt
  • 1 tbsp. Lime or lemon juice
  • 2 – 3 tbsp. Olive oil
  • 1 cup Water ((Chilled for a cold soup and boiling for a hot soup))
  • ½ – 1 Small red chili ((for spicy taste))
  • Leaves of 6 stalks of parsley
  1. Cut tomatoes in halves and puree for about 40-50 seconds in a Power Blender. Next, place the remaining ingredients in the blender (excluding chili and parsley) and pulse until smooth.Now, add chili (if using) and parsley and pulse until they are finely chopped.Finally, refrigerate for 10-15 minutes, if you prefer your soup chilled, or serve immediately.

Health Information

The beautiful red color of tomatoes is a good indication that they are rich in antioxidants. Antioxidants fight cancer causing free radicals. The vitamin A in the tomatoes improves eyesight, the Vitamin B reduces cholesterol and the healthy acids in the tomatoes are known to protect the body from carcinogenic properties found in food.

Zucchinis or alternatively known as baby marrows resemble cucumbers in appearance. They are rich in vitamin C which helps fight off diseases caused by free radicals. They are also known to lower cholesterol, help maintain weight management and the magnesium in the zucchini reduces the risk of heart attacks and strokes.
