Creamy Butternut Soup

There are many comfort foods South Africans enjoy during cold weather, but butternut soup is close to the top. Its nutty flavor makes it an excellent ingredient in purees and soups since it is less stringy than pumpkins. This delicious creamy butternut soup recipe that is quick and easy to prepare. Perfect for a starter or to enjoy as a family meal. 

Implements and Equipment:

  • Super Blender
  • Peeler
  • tsp
  • Measuring cup

Ingredients:

Butternut, peeled and cubed
Hot water
Cashews
Celery
Sea salt
Garlic
Lemon
Cinnamon
Red onion

Health Information:

Butternuts contain a large amount of vitamin C, a powerful antioxidant that helps fight diseases such as the common cold and flu. They are also rich in beta-carotene, the pigment that gives it the bright orange colour. This pigment is known to be beneficial for asthma, lowering the risk of colon cancer and stabilising sugar levels.

Known for their tender consistency and sweet taste, cashews are a type of nut. Cashews are a good source of fiber, protein, and healthy fats.  In a similar fashion to nuts, cashews can promote not only weight loss, but also blood sugar control, and heart health.

Celery is known to have the least amount of calories while being able to reduce inflammation, reduce stress levels due to the magnesium content, regulate acidity in the body, improve digestion due to the water content and supply your body with natural salt as it contains sodium.

Garlic, which is closely related to onions, leeks and shallots is normally added to food to enhance the flavour and aroma but did you know that at its most basic garlic is medicine in nature. Just one clove of garlic has the following components, Vitamin C, B6, manganese selenium and fibre. It also contains calcium iron and potassium which help strengthen the bones in the body.
